Ingredients
1 lb Ground turkey, lean
1 tsp Basil, dried
2 cloves Garlic
1 cup Green beans, fresh
1/2 cup Onion
1 1/2 tsp Oregano, dried
1 14.5 ounce can Tomatoes, fire roasted
1 1/2 cups Zucchini and/or summer squash
1 tbsp Olive oil
1/2 cup Mozzarella cheese or regular mozzarella cheese, smoked
Direction
Brown the turkey and onion in a large skillet over medium high heat. When the turkey is no longer pink add in the green bean. Cook for about 2 minutes and then add in the zucchini, summer squash, fire roasted tomatoes, dried oregano, basil, salt and pepper. Cook for another 3 minutes or until the zucchini and squash are tender.
Finish the skillet by topping it with the shredded cheese. You can either wait for it to melt or broil it in the oven for a minute or two, until the cheese is melted and golden brown.
Happy Friday Everyone! I’m back with another recipes post. One of the thing my family has been working on. Is eating more vegetable. So therefor I came up with a quick and easy recipe to get a lot of great vegetables in one meal. Which is the recipe I’m sharing with you all today.
This one skillet meal is super yummy. That you whole family will love it. Of course if you didn’t like the veggie that I pick. You could pick ones that you family enjoy. Baby girl loves herself some cherry tomatoes. That we always have them on hand for her. She even loved this dinner. If you want to you could put this mixed over rice or pasta. Since we are watching what we eat. We just ate it as is.
