Ingredients
4 large portobello mushrooms
1 pound 88 % lean beef
4 ounces grated cheddar cheese
2 cups fresh spinach finely chopped
2 tablespoons grated Parmesan Cheese
additional salt and pepper to taste
additional Italian seasing to taste
1 garlic clover
Preheat the oven to 375F degrees. Remove the stems from the portobellos, chop finely and add to the ground beef. With a spoon, scrape out the gills on the underside of the mushrooms and discard. Chop the spinach and grate the cheese.
Season the mushrooms with a sprinkling of salt and pepper. Mix the cheddar cheese and spinach into the ground beef. (I used my hands. I also added 1/2 teaspoon of salt and 1/2 teaspoon of pepper.) Form two patties and press them onto the portobello mushrooms.
Place the stuffed mushrooms on a small sheetpan or baking dish and cook for 20 minutes. Add the Parmesan cheese to the top of each and pop back into the oven to melt the cheese or under the broiler to brown it.
Happy Monday Everyone! I’m back with a new recipe post. Since I haven’t done one of these in two month. I used to make a new recipe every month. Over time that has stop. I do make new recipe here and there. Which when I do. I love to share them with you all.
Like todays recipe. This recipe is so good that I have actually have already made this meal twice. If I have made the recipe more than once. Then you know it good. Even baby girl loves this recipe. She will only eat the meat and not the mushroom cap. In my book that’s a win.
Since she still in getting some veggies in the meat mixer. The first time I made this recipe we all just ate it how it was for dinner. The second time I made this recipe I added a bake sweet potato to it. You can make this recipe as you meal or a side dish it up to you.
In are house this is our dinner. Then we have one extra mushroom leftover. The either Ant or me will take the next day to work. No leftover go to waste in are house. We eat them for lunch or dinner. Depending on how are work schedules.
