Ingredients
2 1/4 cups diced cucumbers, partially peeled
1 cup tomato, seeded and diced
1/4 cup red onion, diced
2 tablespoons red wine vinegar
1/2 tablespoon fresh parsley, minced
1 tablespoon extra virgin olive oil
1/2 teaspoon kosher salt and black pepper, to taste
15 ounce can chickpeas, rinsed and drained
Instructions
Combine all the ingredients together and toss well.
Happy Wednesday Everyone! Today I’m back with another recipe post. This recipe is super easy to make. I made this recipe for my work potluck. The potluck was for one of my co-worker who was retiring. Which she is gluten free. Which this recipe fit the bill.
Everyone at the potluck loved this recipe. I just love that it was quick and easy to make. Plus it is super healthy. I will be so making this recipe again.
